Abstract:One kind of new rabbit meat product was developed by using sensory evaluation technology. Several kinds of best-selling meat products from the market had been selected. By using quantitative descriptive analysis method, the sensory characteristics of every product were evaluated and the most popular sample had selected from several kinds of products. Compared the sensory characters of the most popular products and the sample product, the shortage were founded. Finally, the best formula could be determined and the sensory quality of the new product should continue to improve.
