Abstract Catering service market in china has entered into a new era characterized with diversity, customization and lower prices in demands and many new overseas players from the rest of the world, this posing great challenge on operation of the traditional Chinese-style catering services. The paper intends to integrate the new concept of modularity based on mass customization into the Chinese-style catering operation and present some propositions on raw material, production process and product innovation, thus aiming to reach a new operation model.
